The Lobster Roll

An American dish that I have become familiar with since moving to New York. There are a few famous places that serve it and one of the most well known is Pearl Oyster bar on Cornelia St in the Village. Well here is an example of taking a simple dish and over indulging to make it complex. They use too much mayonnaise and over dress the lobster making people feel gluttonous after completing it or forced to share it because it is too rich. I thought this is just the way the dish is but it is not and can be a harmonious dish where the roll, lobster and dressing are complimentary.

One example is in Sag Harbor, the restaurant called Spinnakers itself wasn't without fault but the roll was a perfect example of ingredients coming together to perform a dish that makes sense. An effort to get to but try it if you are in the area. On the other hand, Pearl Oyster is a good restaurant but the signature dish is a disappointment, simple.
